For 25 years, Bruno Dumery has been providing advice at the Maison du Vin de Saint-Emilion. Accompanied by his deputy Thibault Cailleau, the director has tasted the 450 different wines from Saint Emilion, Saint-Emilion Grand Cru, Lussac Saint-Emilion and Puisseguin Saint-Émilion appellations present in their cellars which is over 250 châteaux! With this detailed knowledge of the four appellations, the two professionals will help you choose the wine that will match with your festive meal, from appetizer to dessert.

"With cold meats, you need young and fruity wines. For dishes with sauce, slightly more matured wines are recommended. As for game meat, they  match best with older wines. Their notes of leather, forest and a bit of animal will bring out that gamey side. In contrast, for foie gras, opt for light and elegant wines, with very fine tannins "

Bruno Dumery has the quality of being a man attentive to others. This DUAD holder (university diploma of aptitude for tasting) is at your disposal to share with you his expertise in Saint-Emilion wines. Thibault Cailleau describes himself as a wine pedagogue. Originally from Saint-Emilion, the deputy director of the Maison du Vin de Saint-Emilion holds a BTS in the sale of wine and spirits. His career led him to do many jobs: from the trimming of the vineyard to the vinification, via trade. He was also a sommelier and an independent wine merchant.
To remain relevant and insightful, Bruno Dumery and Thibault Cailleau taste each new vintage and regularly taste the ones from before. Their purpose is to advise you about the aroma, depending on your taste and your budget.
